delectable potato & zucchini tacos


zucchinis- two sliced
potato medley (red, yellow, & purple) - one of each, sliced
sweet onions- diced
sweet potato strings

combine all in a deep pan on stovetop, coated with EV olive oil
season with: TJs 21 seasoning salute & garlic powder

cook on medium, stirring occasionally. until all ingredients are nice and soft and mushy.  

fill a flour tortilla & top with: 
(optional) chèvre fine herb goat cheese or shredded cheddar
diced tomatoes
TJs cilantro dressing
